Given that the first day of spring is a mere two days away, we figured it was about time to get some recipe inspiration out there. While the weather in our neck of the woods isn’t exactly balmy, it’s nice to start thinking of these spring-inspired recipes, so when the weather finally does come around, you’ll be armed and ready with some delicious eats.

This compilation is completely random, and simply contains some delicious recipes we found from looking around the web – and one or two of our own :) Feel free to take a look around, and share your favorite spring recipes with us too!

Mushroom, Millet and Leek Frittatas
A wonderful option for breakfast, lunch or dinner, these frittatas are loaded with flavor. Plus, this particular recipe is prepared using muffin tins, making portable, individual-sized portions. Who doesn’t love that?!

While this salad isn’t exactly spring inspired, it’s what I like to think of as a “transitory” salad. In the winter, salads aren’t a popular choice – there’s something less than appealing about a pile of leafy greens when it’s -10 degrees outsides and your fingers are numb. But in the spring and summer – salads abound! This salad is loaded with delicious but also healthy toppings, which means it’ll help you transition from heavier winter eating to lighter spring habits.

Warm Arugula Salad with Quinoa and Goat Cheese
Now this salad is a true spring salad! A great option for vegetarians, this salad incorporates healthy greens, quinoa for protein, and goat cheese for some creaminess and tang. It’s heavy enough to be satisfying, but light enough not to weigh you down. A true winner, right there!

Grapefruit Yogurt Pound Cake with Thyme
After you’ve consumed your nutritious and tasty salad from above, you can happily indulge in a slice of this not so nutritious cake. But for what lacks in the health department, it totally makes up for in flavor. Grapefruit is zesty and totally screams spring, and when paired with tangy yogurt and herbaceous thyme, it’s such a winning combination.


Mixed Berry Pound Cake
If grapefruit and thyme aren’t your thing, then how about this berry cake? Another pound cake, but a totally different breed. This cake incorporates multiple kinds of berries so you can use what suits your tastes, and did I mention – there’s cinnamon streusel? If that doesn’t sell this cake, then I don’t know what will.

Spinach Soup with Garlic Thyme Croutons
Spinach soup might sound a little questionable, I get that. But with potatoes for some body and texture, and loads of other flavorful additions (can you say garlic thyme croutons?!) – this soup is spring in a bowl, with an extra crunch. Personally I can’t wait to give this a try.

Banana Carrot Cupcakes with Coconut Cream Cheese Frosting
Maybe it’s the cute little egg nests on these cupcakes that make them seem so spring-like, or their abundance of cheery, familiar flavors. Either way, what a great spring recipe – and perfect for Easter, if you celebrate! These will make you feel good inside and out.
