Peanut Butter and Jam Cookies

Peanut Butter and Jelly is the ultimate flavor combination. It’s been adapted to take on many shapes and forms, brownies, bars, truffles, and more. But one adaptation I’ve surprisingly never tried is PB&J Cookies. I’m not a big fan of peanut butter cookies because I tend to not like the texture, but when I came across this recipe they looked too good to resist!

As luck would have it, we had more delicious jam from Bonnie’s Jams leftover after making Linzer Cookies, and it was just begging to be used! For these cookies, I used both the Apricot Orange and the Raspberry Lime. Continue Reading

Linzer Cookies

Linzer cookies are a seasonal staple, especially during the holidays when decorative cookies are all the rage. Well we got a head start on holiday baking with these apricot-orange filled beauties, with jam courtesy of Bonnie from Bonnie’s Jams! She visited our new kitchen store local Root recently, and promised to drop off some jams to sample – which promptly arrived at our front desk just a few hours later!

Bonnie is a lovely woman, and she makes some really lovely jams. We sampled the apricot orange, as well as the raspberry lime, both of which had the perfect consistency and were wonderfully flavorful. I used the raspberry lime jam in another cookie recipe (coming this weekend!), and the apricot orange jam for these. I loved the flavor combination! Continue Reading

Salted Caramel Apple Crumb Bars

There’s nothing like rounding out a delicious meal with something sweet. In the fall, homemade dessert options are plentiful with the reappearance of apples, pumpkin, and flavorful spices. These bars are the perfect dessert, not only because they taste incredible, but because they’re fairly easy to make and visually quite appealing. Generous chunks of crisp, local apples are sandwiched between a buttery shortbread crust and topping, and drizzled generously with salted caramel sauce. They’re definitely as good as they sound!

This recipe calls for homemade caramel sauce, but if you’re in a hurry or just plain intimidated by making your own, you’re welcome to use a pre-made caramel sauce here. Dulce de leche would even work, though the flavor would be a bit different. I used macintosh apples for the filling, as they are a great baking apple and keep their shape and texture well. Strawberry Ganache-filled Chocolate Cupcakes with Vanilla Buttercream

These cupcakes were such a sweet ending to a wonderful meal. At first glance, you’d think the strawberries are missing – but fear not, they’re just tucked inside! To pull together our strawberry-themed affair, I figured we needed a really fantastic dessert that would blow everything else out of the water. And so became these cupcakes!

The recipe begins with a basic chocolate cupcake recipe. The cupcakes baked up beautifully, but within minutes of being removed from the oven, they all collapsed! I am partial to cupcakes with nicely round domed tops, so this was a bit disappointing at first sight – but after tasting one that had accidentally broken, all doubts were gone. The cupcakes were great! Ultra soft and tender, with a generous crumb, and a smooth chocolate flavor. Continue Reading
