Bittersweet Chocolate Truffle Tart

No Comments 26 December 2012

Holiday desserts come in many different shapes and sizes. There are the traditional pies, decorated and festive cookies, and fruitcakes galore.  But my favorite kind of holiday desserts always include chocolate. This dessert is a fruit-and-chocolate hybrid, which has the best of both worlds -lusciously silky, smooth chocolate filling, and crunchy, tart cranberries.

This tart starts with a sweet pastry dough base, called a pate sucree, which is simple to make and just needs a bit of chilling time before it’s ready to use. The filling is a decadent chocolate/cream/butter combo, that gets poured into a par-baked tart shell, and finished off in the oven.

Pumpkin Magic Bars

No Comments 29 October 2012

Pumpkin is the flavor of the season right now, and we’re totally embracing it! First we shared some Chewy Pumpkin Chocolate Chip Cookies, and today I’ve got another great recipe for Pumpkin Magic Bars.

If you’ve ever had traditional Magic Bars, then you know what they’re all about, but if you haven’t then you’re in for a treat! Magic Bars are one of the easiest things you can make, they’re customizable to your specific tastes, and they are sinfully delicious.

Magic Bars start with a cookie crust, traditionally graham cracker crumbs and butter mixed together, and pressed into a pan. The crust is then layered with a myriad of toppings, starting with condensed milk, then assorted chips (chocolate, white chocolate, etc.), chopped nuts, and coconut. Continue Reading

Strawberry Ganache-filled Chocolate Cupcakes with Vanilla Buttercream

These cupcakes were such a sweet ending to a wonderful meal. At first glance, you’d think the strawberries are missing – but fear not, they’re just tucked inside! To pull together our strawberry-themed affair, I figured we needed a really fantastic dessert that would blow everything else out of the water. And so became these cupcakes!

The recipe begins with a basic chocolate cupcake recipe. The cupcakes baked up beautifully, but within minutes of being removed from the oven, they all collapsed! I am partial to cupcakes with nicely round domed tops, so this was a bit disappointing at first sight – but after tasting one that had accidentally broken, all doubts were gone. The cupcakes were great! Ultra soft and tender, with a generous crumb, and a smooth chocolate flavor. Continue Reading

Strawberry Lemon Cookies

No Comments 24 August 2012

Strawberries and lemon are a pretty classic combination. Maybe not on the level of strawberries dipped in chocolate, or strawberries and cream – but generally speaking you can’t go wrong. This recipe is a fusion of traditional sugar cookies with lemon and strawberries added in, resulting in a completely new summer cookie.

The edges are a bit crispy, the centers delicate and soft – a really wonderful texture contrast that kept us grabbing for cookie after cookie after cookie. These little beauties are dangerous, since it’s hard to stop after just one. Continue Reading
